An Old Friend Returns

When I was getting this new blog up and running I contacted some friends about being on the mailing list. One of them was John Thompson and as a result I found a link to he and Nan’s blog and while poking around there, I came across some recipes.

One of his offerings was Y Tuna Kasserole. With the exception of minor adjustments for personal preferences, it is almost exactly the same recipe we gave them many, many years ago that was called Tuna Diane.

Tuna Diane

Here is our recipe:

TUNA DIANE

5 oz, uncooked macaroni
1/2 cup, mayonnaise or miracle whip
1/2 cup, milk or dry white wine
1 can, cream of mushroom soup
1 cup, shredded cheese
1/2 tsp, dry mustard
1/2 tsp, dill weed
1 can, drained tuna
1  can, black olives (2 1/4 oz) drained
buttered bread crumbs or crushed chips

Add macaroni to sufficient boiling salted water and return to boil while stirring. Boil uncovered for 8-10 minutes. Drain and rinse with hot water. Combine the mayo, milk, cheese, seasonings and olives. Stir in the macaroni and tuna. Pour into a greased 1 1/2 quart casserole. Cover and bake at 350 degrees for 30 minutes. Uncover and sprinkle with the crunchy toping. Bake 5 minutes more.

Seeing his recipe inspired us to have this meal after all these years, so last night we chowed down.

    OMG. Isn’t this a different version of tuna noodle casserole? Dan and I literally kept from starving by eating tuna noodle casserole when we were in our last year in Ames. Of course he refuses to eat it now. However, he fixed pasta carbonara for us a couple times this past year and was happy as a clam. Ingredients… the same but tarted up with real food instead of mushroom soup.

    I was just thinking about Tuna Diane the other day. I bet no one in my house would eat it but me though. 🙁

  3. We always use wine instead of milk these days, and I never ever used dill. This is the best tuna casserole I’ve ever eaten. Since the recipe has some variants we would never have tried, like cream of celery and shrimp, I’ll lay you odds the one on our web site is exactly as you gave it to us when Jimmy Carter was in office (except for the goofy name).

    Remember showing me how to stir fry and how to make Steak Dianne? I haven’t done a stir fry for years, not since I bought a crappy wok and gave away our good wok (before I realized how crappy the new one was). Plus we haven’t had gas since 1989 and using the wok on an electric stove, while possible, just isn’t as rewarding.
